This is a remake of a tempeh recipe I have done before. I was inspired to do this for the Fiesta Friday anniversary which I stumbled upon when visiting the awesome blog from the Novice Gardener
Organic Corn tortillas
Chopped Kale, Brussel sprouts, Broccoli stems, Red Cabbage, Cilantro, Red Onions
Simple Olive oil, mustard and vinegar dressing – just mix together with salt and pepper to taste. Add juice of lemon to elevate the flavor as needed.
Tempeh cut in strips
Here are the very simple steps:
Mix the vegetables in the dressing
Pan fry the tempeh strips until golden.
Heat the corn tortilla
Assemble with the vegetables, tempeh and avocado slices.
This is so fund and easy to make and is full of goodness. Enjoy!
