Lentils and quinoa buns

Healthy plant based eating isn’t about perfection. It’s about listening to your body, choosing ingredients that serve you, and finding joy in the process. These buns are a reflection of that philosophy — simple, nourishing, and made with care.

What makes these buns special is the combination of soaked pink lentils, home-ground quinoa flour, plant protein, flax meal, and psyllium husk. The lentils are soaked, drained, and blended into a smooth paste before being incorporated into the dough. This gives the buns a wonderful nutritional foundation while helping create a tender, hearty texture.

They’re naturally gluten-free and make a wonderful alternative to conventional bread when you’re looking for something more substantial and protein-rich.

A little about the star ingredients

Quinoa:  Quinoa is nutrient-dense and packed with protein, fiber, and key minerals. One cup (185 grams) of cooked quinoa provides 222 calories, 8 grams of protein, 39 grams of carbohydrates, and 5 grams of dietary fiber. Such perfection in a tiny seed.

Instead of buying quinoa flour, I grind whole quinoa at home. The freshly ground quinoa gives the buns a lovely nutty flavor and pairs beautifully with the earthy sweetness of pink lentils.

Lentils: Lentils are nutrient-dense powerhouses that are rich in protein, fiber, and complex carbohydrates while remaining very low in fat. I used pink lentils (masoor dal) that lends beautifully to this recipe.

Flax meal and psyllium husk bring fiber and help bind the ingredients together, which is especially important in a gluten-free recipe. Tapioca starch gives it the elasticity and chewiness.

With all these beautiful ingredients – each bun delivers approximately 12 grams of protein.

Try them with:

  • Avocado and a sprinkle of flaky salt
  • Hummus and roasted vegetables
  • A veggie burger
  • Lentil patties
  • Your favorite cheese and sliced tomatoes
  • Just a smear of homemade vegan butter

They’re also delicious toasted. A little crispness on the outside makes the hearty interior even more satisfying.

Storage

Once completely cooled, store the buns in an airtight container.

For longer storage, freeze them individually. Thaw and toast when you’re ready to eat them.

I especially like freezing homemade buns because it means I can make a batch once and have a wholesome, protein-rich bread option ready whenever I need one.

A hearty and healthy plant based protein rich bun

Ingredients

  • 1.5 cup Organic Quinoa flour
  • 1/2 cup Pink Lentils( Masoor dal)
  • 1/3 cup unflavored plant protein powder
  • 3 tbsp flax meal
  • 2 tbsp tapioca flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp date sugar
  • 1/2 tsp salt
  • 3 tbsp psyllium husk
  • 1 tbsp apple cider vinegar
  • 1 cup room temperature water
  • sesame seeds ( approx 3 tsps)

Directions

  1. Wash and soak 1/2 cup lentils in water for 30 mins. Drain and grind in a high speed blender. Add a few tbsp of water as needed.
  2. Turn the oven on to 325 degrees F. Combine quinoa flour, tapioca flour, protein powder, flax, baking powder, baking soda, salt,
  3. Soak the psyllium husk in water and vinegar and let it sit for 5 mins
  4. Add the ground lentils and psyllium husk gel and mix well with a spatula or your hands. Hands are best in this case so everything is well hydrated. The mixture will be very wet. Add more water if its not. It will be loose and sticky. Don’t worry.
  5. On a silicone lined baking tray or silicone bun mold, with wet hands form light dough balls. Sprinkle with sesame seeds.
  6. 5. Bake. Bake at 325 F for about 50 – 60 mins.
