Beetroot Raita
Made with grated organic bettroot, plant yogurt and spices, this raita has a burst of color, creaminess and depth of flavor
Ingredients
- 1 large or 2 medium-sized beetroots grated
- 1 cup dairy-free yogurt (coconut or almond-based work well)
- 1 green chili, finely chopped (adjust to taste)
- 1/2 cup fresh cilantro, chopped
- 1/2 cup chopped green onions
- 1 tsp roasted cumin powder
- 1/2 freshly ground black pepper
- 1/2 tsp garlic powder
- Salt to taste
Directions
- Prepare the Beetroots: Wash, peel and grate the beets.
- Mix the Yogurt: In a large mixing bowl, combine the dairy-free yogurt with the beets. Mix well until you achieve a smooth and creamy consistency.
- Add the spices and greens.: Add the salt, pepper, garlic and cumin. Then add the cilantro and green onions
- Adjust Seasoning: Taste the raita and adjust salt or cumin if needed. Remember, the flavors will develop further as the raita sits, so donβt be afraid to experiment to suit your palate.
- Chill and Serve: Allow the Beetroot Raita to chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and intensify.
- Presentation: Serve the Beetroot Raita in a beautiful bowl, garnished with a sprinkle of fresh cilantro. The vibrant hues make it an eye-catching addition to any table.
