That Kashmiri chutney to brighten up your table, your palate and your day 😊😋. This elevates the flavors of walnuts and white radish with a nudge of green chilies, garlic and mint which is finally combined with the richness of creamy yoghurt ( plant based is perfect). Loving the summer eggplants- this one is roasted long eggplant brushed with thyme, lemon and oregano oil served on a refreshing cucumber dill yoghurt base. Plant based yoghurt will be perfect here. Sprinkle some sumac on top for the zing It’s eggplant season - enjoy your summer produce. This dish is called Mahshi Batinjaan. Batinjaan is eggplant. You can prepare the dish stuffed with meat or vegetable. I have used a stuffing mixed with rice. Any leftover stuffing can be cooked to a side dish. Weekend hotpot’s is a family one dish that bring everyone together. You can serve this beautifully on ramen on rice noodles. Spice it up with kimchi, garlic,gochujang and tone it down with some plant milk. It’s always soup season in my kitchen - this is a  clean and heavenly bowl of vegetable miso ginger soup that fueled my weekend. A beautiful hot blazing summer morning calls for a chilled soul quenching drink to kickstart the day - this one is simple  but packs a punch: organic cucumbers, pineapple, ginger and wheat grass juice powder. Vegetables are summers gift to plate as poetry- this is my rendition to showcase their beauty in a tagine and spices I carried in my backpack from Morocco …. Mango saffron dreams- a sweet and intoxicating simmered infusion of rice, mango, cardamom, saffron and milk sweetened with condensed milk and topped with pistachios 💕 The simple Tamatar and Shimla Mirch ( tomatoes and bell peppers) made Kashmiri style.
