Feed your soul beautifully - a quick eggplant and oyster mushrooms stir fry is amazing over rice. There is a recipe on my YouTube ( link on profile) I also added some bokchoy and enoki because I had some on hand. An amazing sweet potato kibbeh inspired by my favorite @hadiaslebanesecuisine 🙏 Sunshine and Kashmiri Haakh- it’s what for #lunch. Grown organically in my #urbangarden and made so simply. A simple lentil and vegetable soup - perfect for a rainy evening Mother’s Day at @ariakereston does not disappoint- a beautiful #vegetarian platter for me was just perfect as the family soaked in the sunshine on the patio. Creamy Corn Curry with East African roots…. The blend of tomatoes, spices( turmeric, chilies, coriander) and coconut milk is fragrant and simmers the corn on the cob beautifully. Redefining salads: this one crosses many geographies to bring together a #protien and #nutrition rich meals. Potatoes bring smiles to the table. this one is a plant based dish that can be a weekly repeat. It’s easy to make and just lovely really 😀. Life is gratitude - let’s take a moment to just be…. Loving our hard work in our urban backyard. Bees and birds ( and Us) are just delighted ❤️
